Today shared the recipe of egg lababdar, a mughlai cuisine having a different taste than usual egg curry. If you are looking for any special dish for special occasions, then do try this creamy egg curry. Serve with naan or simple roti and rice and enjoy its deliciousness.

1 cup=250 ml     1 tbsp=15ml    1 tsp=5ml

Prep time: 10 minutes      Cooking time: 35 minutes   Serve: 4

 

Ingredients:

To make paste

Tomatoes – 3 small

Garlic cloves – 8

Ginger juvenile – 5 of ½ inch

Cinnamon – ½ inch

Green cardamom – 1

Cloves – 2

Black peppercorns – 4

Cashews – 10

Water – 2 cup

 

Other Ingredients:

Boiled eggs – 6

Oil – 2 tbsp

Bay leaf – 1

Cumin seeds – 1 tsp

Green cardamom – 1

Cloves – 2

Finely chopped onions – 1 large

Tumeric powder – ½ tsp

Red chilli powder – ½ - ¾ tsp

Kashmiri red chilli powder – 1 tsp

Coriander powder – 1 tsp

Garam masala powder – ¼ tsp

Water – 1 cup

Sugar- ½ tsp

Salt – To taste

Crushed Kasuri methi – 1 tbsp

Fresh cream – 2 tbsp

White part of 1 egg

Coriander leaves

 

Recipe:

  1. Boil 2 cups water. Add all ingredients listed under make paste.
  2. Boil for 8-10 mins. Switch off the flame and remove water.
  3. Cool ingredients. Peel off the skin of tomatoes. Roughly chop them and add to the grinder.
  4. Add all other ingredients to grinder and grind all to the smooth paste. Use water if required. Keep this paste aside.
  5. Cut half 5 boiled eggs and keep aside.
  6. Heat oil in a pan. Add bay leaf, cumin seeds, green cardamom, cloves and chopped onions. Fry till onions turn soft.
  7. Add above tomato paste. Cook for 2-3 mins.
  8. Add turmeric, red chilli, kashmiri red chilli, coriander, garam masala powder and mix well.
  9. Cook till oil leaves the pan. Add water, sugar and salt. Mix well.
  10. Add boiled eggs and cover pan. Cook for 8-10 mins. on low flame.
  11. Remove lid and add kasuri methi, cream and grate white part of 1 egg. Mix well with light hands.
  12. Garnish with coriander leaves and serve and enjoy.
