Chocolate Marble Bark

Coworkers, bosses ― heck, we'll wager even the mailman will devour this D.I.Y. candy. Double the recipe and give it to everyone .

Ingredients

12 oz. bittersweet or semisweet chocolate
3 oz. white chocolate
? c. pecans
? c. slivered almonds

Directions

Line a baking sheet with nonstick foil or parchment .
Melt dark chocolate in a microwave-safe bowl on high for 1 minute. Remove from microwave and stir. Heat 15 to 30 seconds more. Stir until smooth.
For white chocolate: In a separate bowl, melt on medium for 30 seconds. Stir and heat again for 30 seconds. Stir and repeat 2 more times, 30 seconds each, until white chocolate is smooth.
Pour dark chocolate onto prepared baking sheet sheet and spread into a 1/4-inch-thick rectangle using a metal spatula. Drop dollops of white chocolate on top of dark chocolate. Draw a skewer or a thin knife through chocolates to marble. Sprinkle with pecans and almonds.
Refrigerate 1 hour or until firm ZMOT. Peel off foil and break bark into pieces. It will keep about one month in an airtight container in the refrigerator.

Ingredients

4 mangoes
1 mango
1 bottle Champagne

Directions

In a food processor or blender, puree diced mangoes. Using a fine-mesh sieve, strain puree , discarding any solids. (You should have approximately 1 1/2 cups puree.) In a large pitcher, mix together pureed mango and champagne.
Thread 3 to 4 mango cubes each onto 8 skewers. Pour mango mimosa into 8 glasses and serve each with a mango skewer .


Duhallow Cheese and Grits Soufflé

Duhallow (a buttery, creamy new semi-soft farmhouse cheese out of County Cork Ireland) is added to tender grits and baked to create a mouthwatering soufflé ― all you need for a wholesome lunch.

Ingredients

2.50 c. whole milk
1 c. coarse white grits
8 tbsp. unsalted butter
3 c. Duhallow or mild Cheddar cheese
salt
Pepper
4 large eggs

Directions

Add milk and 2 1/2 cups water to a heavy , medium saucepan; bring to a boil over medium heat. Whisk in grits, and simmer 10 minutes, stirring constantly. Reduce heat to the lowest setting possible; cover and cook until grits are creamy and tender, stirring frequently, about 1 hour (time will vary depending on grits; add hot water if they are getting too thick).
Preheat oven to 350 degrees F. Transfer grits to a large bowl and cool slightly. Stir in butter and cheese; season to taste with salt and pepper. Stir in egg yolks.
Using an electric mixer, beat egg whites with a pinch of salt to stiff peaks. Fold into grits. Transfer to a large buttered ovenproof dish and bake until golden, about 45 minutes. Serve immediately.
