The Anno imo has a tough reddish-brown hued skin which encases a pale orange flesh. When cooked it's flesh becomes moist and creamy. The Anno imo is known for its exceptionally sweet flesh and contains nearly twice the sugar content of a traditional Japanese sweet potato (Satsuma). Anno imo can be round to slender in size and form, the sweetest ones being those with a plump and rounded shape. The sugar content of the Anno imo will be at it's peak of flavor three weeks to a month after they are harvested.
