Ohmi black beef brand Shabu-Shabu
Omi beef is a less well-known but equally scrumptious type of wagyu that comes from Shiga Prefecture. Despite beef consumption being forbidden in Japan up until 140 years ago, rumor has it that the Shogun and some feudal lords (daimyo) would eat beef Omi beef, ostensibly because of its “medicinal purposes”. The fact that it tastes great surely had nothing to do with it.
'Shabu-Shabu'
'Shabu-Shabu' is another kind of 'Pot-cooking', in which thinly sliced tender beef and various vegetables are cooked in a brass pot on the table, usually by the diners themselves. Sliced beef, soybean curd, mushrooms, green vagetables, etc., are prepared on a large platter. These ingredients are swished slightly, one by one, in the boiling soup stock in the pot on the table. After simering briefly, the items are eaten by dipping them in special sauces made of Miso paste, soy sauce, sesame seeds, lemon juice, and so on.
