grey starlings are birds about 24cm long belonging to the starling family.
from summer ,when their breeding season ends,
through to winter, they roost communally in groves ,
on roadside trees, and elsewhere .
the number of birds can sometimes exceed thousands.
ムクドリは全長約２４センチのムクドリ科の鳥です。
繁殖期が終わる夏から冬にかけ、
林や街路樹などをねぐらに集団で集まります。
その数は数千羽を超えることもあります。

dried mullet roe is made by salting mullet roe
and drying it in the open air.
it turns amber in color when finished ,
and is preferably consumed alongside sake.
it is one of the three great japanese delicacies.
カラスミはボラの卵巣を塩漬けし、干して作ります。
琥珀色に仕上がり、酒のつまみとして、好まれます。
日本三大珍味の一つです。

traditional master brewers enter sake storehouses alongside local people in
the agricultural off-season to supervise the brewing process.
in recent years, there have been cases where sake storehouse employees have
apprenticed to become master brewers.
杜氏は酒造りの最高責任者です。
伝統的な杜氏は農閑期に同郷者と共に
酒蔵に入り、醸造工程を監督します。
近年は酒蔵の社員として、修業し、
杜氏になる例もあります。
