Last week, my stomach acted weird for how many days, and lost some energy. That`s why when I recovered, all of my food cravings came in. One of my cravings is eating Leche Flan. Leche flan is one of the famous desserts in the Philippines. Leche Flan is a Filipino version of creme caramel. It`s my first time to make Leche Flan. It is pretty difficult and tedious to make because you have to cook the custard thick without any bubble holes and then bake it over a steam The Filipino version isn’t that much different. Nope. It’s a lot of difference!
In the Philippines, leche flan (the local term for the originally Spanish flan de leche, literally “milk flan”) is a heavier version of the Spanish flan made with condensed milk / evaporated milk and more egg yolks ( separating egg yolks are difficult ). Leche flan is usually steamed over an open flame or stove top, although rarely it can also be seen baked. Leche flan is a staple in celebratory feasts in the Philippines.
I think I baked my leche flan pretty well because I got the consistency of the thickness and richness of the dessert. However, it's not that perfect because the taste is not close enough to the normal leche flan made by an expert.
