I often hear that 'green tea is too bitter'
It is true if you brew it with very hot water.
But if you brew it with less hot water, you will experience UMAMI without NIGAMI (bitterness).
This you-tube shows how to brew green tea extracting UMAMI as much as possible in three differnt ways.
You will see the comparison of colors of tea liquid and tea leaves after the brewery below.
This gives you some idea how they should look like when you brew green tea.
left: 60 degree water right: 95 degree water
2 min. 5 min.
You may notice that the lipuids are not green but yellowish gold color.
Do you know why they are not green?
It is because this tea leaves are processed with very short steaming, which usually make the tea less color but with full of aroma.
If the tea leaves are steamed long, the liquid will be green.
Hope you enjoy your green tea with the help of this workshop in the you-tube.
