The kayaker who dives into a hydraulic white-water "grinder" even though he's just seen it suck three friends to their doom. When you hear such tales, you think, Gosh, I'd never do something like that. But would you?
"white-water" の意味ですが、辞書を直ぐに見てちょっと後悔しました。ちょっと想像すれば分かったかなと思いますが、自分は想像力に欠けると自覚しているので、どうも想像する努力を怠いがちです。
多くの辞書はハイフンの付かない "white water" で意味を掲載しています。

1.a stretch of water with a broken foamy surface, as in rapids: He says people are usually surprised that such good white water rafting exists so close to southern Queensland.
