何となくフランス語の雰囲気を持つ "julienne" なる単語が "jiaozi" の作り方と中国の旧正月を祝う話にそれぞれ次ぎの様に出てきました。

ショウガと人参が "julienned" と言うことなので、切り方か酢漬け（すし屋のガリを思い浮かべています）など何らかの加工のはずですが、辞書で答えを見ます。

GO/NO GO

１年ちょっと前にマーケティングのテキスト "Kotler on Marketing" に出てきた "go/no-go" について書きましたが、最近読んだ計測器のカタログにこの表現が次のようにありました。
A companion limits comparator, Model LC-603, allows selection for all functions, on a GO/NO GO basis for inspection, sorting, quality control, component selection, ect...
"GO/NO GO" の英語の説明は既にEnglish Collection 2009/05/11で紹介しましたが、例えば、ボールベアリングの大きさが特定の大きさの範囲内に収まっているかどうかを調べるのに個々のベアリングの大きさを計測するのではなく、許容範囲の最大と最小の穴の開いたそれぞれのフィルター（ふるい）にかけ、大きな穴を通り(GO)、小さな穴は通り抜けない(NO-GO)ベアリングが合格となるようなテスト方法が "go/no-go" テストです。

man the oars

THE ADVENTURES OF HUCKLEBERRY FINNに動詞の "man" が出てきました。
Then Jim manned the oars, and we took out after our raft.
...
We hustled it on to the raft in a pile, and I told Jim to float along down, and show a light when he judged he had gone about two mile, and keep it burning till I come; then I manned my oars and shoved for the light.
辞書で引用文の例に近い "man" の用法・意味を探したのですがピッタリ当てはまるのはほとんど無く、次ぎの二つの辞書の例が多分近い説明でしょう。

crimp

この単語はjiaozi（餃子）を作り方の記事ではなく、家族の皆で作った思い出の話(リーダーズダイジェスト2月号)からです。
That memory alone, along with the gay chatter shared with my mother as they crouched over our dining table crimping row after row of jiaozi, made me determined to learn how to make them.
餃子の皮の中に具を入れた後、皮に波をつけて押しつぶして皮をふさぎますが、その事に "crimp" と言う私にとっては懐かしい単語が使えるのですね。若い頃コンピュータや電子機器を扱っていて、配線に圧着端子を使うこともあったのですが、ケーブルに圧着端子を取り付ける場合に "crimp" するのです。 "crimp" の意味を今まで辞書で見たことはないので、この際見てみます。

やはり辞書は見るものですね。 "crimp" は金属加工や料理（餃子作りにだけではなく）での微妙な作業に使われる事が良く分かりましたし、Cookery、5.bの説明は魚の活き締めの方法の一つではないですか。　活き締めする事を英語で "crimp" あるいは "gash" と言うことを知るなんて得をした気がします。

let on

HUCKLEBERRY FINNが女の子の衣装を着て女の子のふりをして知らない女の人と話をしている場面にあった慣用句です。
When the woman stopped talking I looked up, and she was looking at me pretty curious and smiling a little. I put down the needle and thread, and let on to be interested -- and I was, too -- and says:
"Three hundred dollars is a power of money. I wish my mother could get it. Is your husband going over there to-night?"
この "let on" は文脈からして、興味をもった「ふりをする」意味だと推測できますが、知らない慣用句だったので辞書で確認します。
・Dictionary.com:
a.to reveal one's true feelings: She was terrified at the prospect, but didn't let on.
b.to pretend: They let on that they didn't care about not being invited, but I could tell that they were hurt.
・Merriam-Webster's Online Dictionary:
1: to make acknowledgment: admit (knows more than he lets on)
2: to reveal a secret (nobody let on about the surprise party)
3: pretend (let on to being a stranger)
ふりをするのと、口外する、暴露するでは正反対に近い意味になる場合もあるのではと思います。　ふりをする場合は "let on to" となる場合が多いのかなとも思いましたが、ふりをするで "let on that" の形を取るのは他にも次ぎのEncartaにあった例の様に多く見つかるので、どちらの意味かの判断は文脈でするしかないようです。
・pretend: to make somebody believe something that is not true
She let on that she was upset, but she wasn't really that bothered.
・secret: to share a secret with somebody ( informal )
He didn't let on that he was very rich.

wrapper and cling film

jiaozi（餃子）の作り方の説明文からです。
To wrap the jiaozi, have small bowl of water handy. The frozen wrappers should be defrosted in the fridge and kept under a damp towel as you work.
餃子の作り方の説明なので "wrappers" が餃子の皮を意味する事は容易に分かりますが、餃子の皮を英語で何と言うかと質問されても中々 "wrappers" は私は思いつかないですね。料理で "wrappers" となるとどうしても透明なプラスティック（？）の包装材の方を思い浮かべるのですが、包装材の "wrappers" を解凍することはないので引用文の "wrappers" は餃子の皮の話だと私にも分かります。
ついでですが、包装材の "wrapper" を "cling film" とも言うことを別の記事の次ぎの文で知りました。
I treated women to my funniest pranks (involving worms, cling film, frogs and fake dismembered limbs).
ここでの "cling film" は普通の使われ方ではないようですが、この文の書き手は冗談しか書かない人なのでどの様に使ったのかは余り深く考えない事にしました。（多分自分の顔に巻きつけたのだと思いますが、そうだとするとかなり危険ですね。子供は真似をしないように。）

truck

２年近く前に "truck" に "garden produce raised for the market" の意味がある事を知りましたが、THE ADVENTURES OF HUCKLEBERRY FINNに出てきた "truck" はまた別の意味があるようです。その "truck" が使われている一文を下に引用します。
We got an old tin lantern, and a butcher-knife without any handle, and a bran-new Barlow knife worth two bits in any store, and a lot of tallow candles, and a tin candlestick, and a gourd, and a tin cup, and a ratty old bedquilt off the bed, and a reticule with needles and pins and beeswax and buttons and thread and all such truck in it, and a hatchet and some nails, and a fishline as thick as my little finger with some monstrous hooks on it, and a roll of buckskin, and a leather dog-collar, and a horseshoe, and some vials of medicine that didn't have no label on them; and just as we was leaving I found a tolerable good curry-comb, and Jim he found a ratty old fiddle-bow, and a wooden leg.
上の文の "truck" は "needles and pins and beeswax and buttons and thread" の様な物を示しているので、裁縫用品の事かと思いますが辞書で確認します。

braised pork

リーダーズダイジェスト2月号に中国の正月を祝う料理の特集記事があり、その中にあった料理に関する四つの表現を覚えたいと思いましたので今日から４回に分けて取り上げます。
The famous Dongpo Pork (braised pork belly) dish from Hangzhou, for example, is named after a Song dynasty poet and stateman, Su Dongpo (1037-1101), whose millennium-old writing is filled with references to the pleasures of food.
"braised pork" の "braise" は料理方法の一つだと思いますが、"bake" 、"broil"、 "steam"、 "fry" "stir-fry"、 "saute"、 "roast" うーん...これ以上は思いつかない。　辞書で "braise" を見ます。

これで大体分かりました。　カレーもこの調理法で作っていると言えるようです。 OneLook検索で普通は出てこない辞書のLinda's Culinary Dictionaryがリストにあったので、ついでに見てみます。

やはり私には普通の辞書の簡単な説明の方が分かり易いですね。
