柿を使った羊羹
今年も、柿の収穫が始まり傷の付いた物や、熟し過ぎたものは砂糖と煮て羊羹にする。
①柿500gの皮をむき、種を除き適当な大きさに切り。
②ミキサーで潰し、砂糖80~100gで好みの甘さに整える。
③鍋に粉寒天4g・水400mℓを入れて火にかけ
混ぜながら1~2分煮て、粉寒天を完全に溶かす。
④③を40℃くらいに冷やし、②を加え容器に入れて冷やし出来上がり。
*柿のジャムを使っても良い。
Yokan with persimmons
