タラの芽の白和えご飯
タラの芽の初収穫でタラの芽ご飯を・・・
①煮沸食塩水(1~2%約)にタラの芽を30秒程茹で、冷水で冷やす。
②水切りして細かく切り、昆布茶・塩を混ぜる。
③②に塩麹で漬けた豆腐・味噌を混ぜて出来上がり。
*塩をまぶして一夜冷蔵庫で軽く醗酵した物は格別の日本食の味だ。
*ゆかり(紫蘇の塩まぶし)をまぶしのも風味があり。鰹節も美味しい
*茹でるのは殺菌・虫退治、水にさらすのは色止めとアク抜き。
*大根葉と納豆・豆腐の組み合わせ。
*モロヘイヤ・オクラ・卵と豆腐の組み合わせ
*ご飯に混ぜたり乗せたりも美味しい。
