人参の卵とじ(しりしり)
沖縄県の家庭料理すりおろす動作、すりすりを表す沖縄県の言。
①人参をスライサーでスライスし電子レンジで柔らかくして、フライパンで塩・胡椒で柔らかく炒める。ブロッコリーの軸も電子レンジで加熱。
➁中火で熱したフライパンにごま油小匙1をひき、①を入れて炒め、料理酒小匙2・醤油小さじ2・みりん小匙2・砂糖小匙2・顆粒和風だし小匙1/2を入れて中火で炒め、全体に味がなじんだら溶き卵1個を回し入れて炒める。
③お皿に盛り付け、トマトを添え白いりごま適量を散らして完成。
*ツナ缶・ちりめんじゃこ・ハム・ソーセジ・ベーコン等を使うのも良い。
