レンコンのきんぴら
シャキシャキの食感がおいしい、レンコンのきんぴら。

①レンコン150gの皮をむき、5mm幅のいちょう切る・人参1本は皮をむき、長さ3cmの細切り電子レンジで加熱。
②ボウルにしょうゆ大さじ5・酒大さじ1・砂糖大さじ1・めんつゆ (2倍濃縮)大さじ1・顆粒和風だし小さじ1・みりん小さじ1・を入れて混ぜます。
③中火で熱したフライパンにごま油大匙2をひき、①を入れ、レンコンに火が通るまで炒める。
④②を入れて中火で炒め、汁気がなくなったら白いりごま大さじ1・鷹の爪輪切り少々を加えてさっと炒め合わせます。全体に味がなじんだら火から下ろし、器に盛り付けて完成。
