ゴーヤチャンプル
チャンプルとは、野菜や豆腐などを炒めた、沖縄の方言で「混ぜこぜにした」というような意味があり、野菜や豆腐に限らず、さまざまな材料を一緒にして炒める。ありあわせの野菜に、豆腐・保存食である塩漬けの豚肉などを加えた家庭料理である沖縄県以外の日本各地でも食べられるようになった。
①サラダ油で、溶き卵に醤油・塩で味付けして炒め、かき混ぜて柔らかい位で取り置く。
②サラダ油で豚肉を炒め、油に豚肉の旨味を移す。
③②にゴーヤ・玉ねぎ(薄切り)・椎茸・人参(細切り)を入れ、コンソメ・塩・胡椒で味付けて①を混ぜる。
*野菜は季節の物で、硬いものから順に加える
④皿にレタスを敷き、③を盛りつける。
Gourd Champur
Champuru means stir-fried vegetables and tofu, or "mixed together" in the Okinawan dialect, and is not limited to vegetables and tofu, but also various ingredients are stir-fried together. It has become possible to eat it in various parts of Japan other than Okinawa Prefecture, which is a home-cooked dish that adds tofu and salted pork, which is a preserved food, to the vegetables that are available.
①In salad oil, season the beaten egg with soy sauce and salt, fry it, stir and set aside in a tender position.

③ In ➁, put bitter gourd, onion (thinly sliced), shiitake mushroom, and carrot (shredded), season with consommé, salt, and pepper, and mix①.
