豚汁
友人から酒粕のプレゼント、早速かす汁で温まろう。
①鍋に水を入れ、豚肉・大根・ジャガイモ・人参・牛蒡・こんにゃく・椎茸など硬いものを先に入れ、あげ・白菜・ネギ・エノキを煮て、最後にわさび菜・菊菜など季節の野菜で煮る。*具材は2~3種類でも良い。
②煮る途中、塩・こぶ茶・だしの素で味付けて、酒粕を煮汁で溶いて、火を止めて醬油麴や味噌で好みの味に仕上げる。
*魚(鮭汁)・肉を入れるのも美味しい。
*豚肉・大根・人参等を炒めてから、水を入れる炊き方も良い。
*味噌を入れない場合は塩で味を付ける。
