Back in the prep kitchen, Ueda had dumped the takenoko into a large industrial sink, where they bobbed like the horns of some rarely glimpsed forest animal, their outer leaves covered in soft brown fuzz and their bottoms a fresh, unsullied cream color. As Ueda plunged his arms elbow-deep into the cold water and began to scrub with a tawashi brush, Onoue continued to grumble. “No good, no good,” he muttered, picking up a steel scrubbing pad to help Ueda.

“Tough, eh?” He lifted one into the air and gestured to its sheath of outer leaves. “See how dark these are? In good takenoko, they’re pale all the way up. And here at the bottom, the nubs”—he pointed again, this time to a circlet of crimson bumps around the base— “these should be white.”

　上田さんが準備部屋に戻ってきて、タケノコを調理台脇の大きな流しにどさっと出した。そこで跳ね上がるタケノコは、滅多にお目にかかることのない森の動物たちの角を思わせた。どれもやわらかい茶色の羽毛のような皮でつつまれ、下の部分は汚れひとつないクリーム色に染まっている。上田さんが両腕を肘まで冷水につけてタワシでゴシゴシ洗い出したが、尾上さんはまた不平を漏らした。

「こりゃだめだな、だめだ」と尾上さんはつぶやくと、上田さんと一緒に準備を進めようと、鉄のスポンジタオルを手にした。「硬いな、こりゃ」

　尾上さんはタケノコを一本取り上げて、皮の葉鞘を指さした。

「ここがどんよりしてる。いいやつはこの線がずっと青白い。そして下のこのコブ」と言って、今度は根元に突き出た深紅の輪を指さした。「ここは白くなきゃだめだ」
